I think maybe:

• the water molecules stick to the added sugar, preventing it from evaporating and thereby causing protein-fat clumps
• the sugar slows down the proteins, saturating the milk and preventing the casein micelles (the most prominent form of protein in milk) from clumping together (which is the same thing they do when milk curdles)

But yeah still figuring it out.  Today, I research.  Tomorrow, I experiment.

lol no this is a different one.  i remember wanting to write more and being like, “no, he said 8-10, so that’s all I’ll write”.  he is very confused sometimes.  this is the same professor who was quite distressed about when i turned this essay in until i reminded him that he gave me a week-long extension.
